Here is a glass of Almond Milk all ready to drink. It is surprisingly delicious and quite nutritious.
This recipe is not original with me. I learned about it by reading the book entitled "Living Health" by Harvy and Marilyn Diamond. They are the co-authors of the "Fit for Life" books.
You can find their recipe on page 407 of this book. My thanks goes to these two authors for sharing so many wonderful recipes. This is the first one I have tried from their book. Please note that I have made some minor adjustments to their recipe.
What are the benefits of drinking Almond Milk or eating almonds?
The authors of the NutFarm website at http://www.nutsforalmonds.com/nutrition.htm state the following:
"One teeny ounce of almonds contains 12 percent of your daily allowance of protein. And absolutely no cholesterol, of course. You'll also get 35 percent of your daily allowance of vitamin E, that valuable antioxidant with so many cancer-fighting qualities. And most of the fat in almonds is monounsaturated, also known as the "good" fat.
This little nut is also loaded with minerals like magnesium, phosphorus and zinc, as well as lots of healthy fiber. And don't forget calcium and folic acid - they're in there too!"
Harvey and Marilyn Diamond state on page 407 of their book:
"Nuts and seed milks were used for centuries in Europe, Asia, and by the American indians, and they are still used throughout the world as easily digestible substitutes for cow's milk. Those made from almonds or sesame seeds are excellent sources for easily assimilated calcium and they are delicious!"
FYI - Be sure to use natural almonds rather than roasted for optimum health benefits.
Here are the nutrition facts on my container of almonds:
* 160 calories per 1 oz. serving (about 28 pieces)
* 14 grams of total fat
* 1 gram of saturated fat
* 0 grams of trans fat
* 0 mg of Cholesterol
* 0 mg of Sodium
* 200 mg of Potassium
* 6 grams of Total Carbohydrates
* 3 grams of Dietary Fiber
* 1 gram of Sugar
* 6 grams of Protein
* 0% of Vitamin A
* 0% of Vitamin C
* 6% of Calcium
* 6% of Iron
This is certainly going to be a rather high calorie recipe; however, the health benefits seem immense.
Step 1 - Half fill a saucepan with water and boil it
Step 2- Measure out 1/2 cup of natural (non-roasted) almonds
Step 3 - Boil almonds for 1 to 2 minutes - I did it 2
Step 4 - Get out maple syrup or a syrup equivalent like this one
Obviously, it would be far more nutritious if you used real maple syrup or even organic maple syrup. This is the only syrup I had in the refrigerator.
Step 5 - Add 2 teaspoons of maple syrup to blender
Step 6 - Pour 1 cup of water into blender
Step 7 - Pick up almonds and squeeze off the skin
I was absolutely amazed. When I picked up the first almond and squeezed, the almond actually shot out of my hand and onto the floor. I learned to be more careful as I squeezed off the skins of each almond.
Step 8 - Pour skinless almonds into blender
Step 9 - Blend the mixture together until totally mixed
Step 10 - Add 1 more cup of water to that mixture
Step 11 - Run blender mixture through strainer to get rid of pulp
Step 11A - This is the strainer from my Juicer since I did not have Cheesecloth
The authors, Harvey and Marilyn Diamond, suggested using cheesecloth to stran out the pulp. I didn't have any.
I tried drinking the almond milk minus straining. It smelled good. It tasted good; however, I ended up chewing my drink.
I put the drink in the refrigerator with the intention of going to the store the next day. Sometime in the wee hours of the morning, I remembered the strainer on my juicer. I used that the next day. It worked perfectly.

Step 12 - Pour strained Almond Milk into glass to drink - add ice if you like
